A Short History

When the settlers in South Africa forged their way from Cape Town inland, it was called The Great Trek. They used every drop of meat from any animal felled by making boerewors. The intestine of the animals used to encase the minced meat which had been mixed with spices and cured naturally by the sun and the wind. What was not cured was cooked fresh over hot coals in a coiled sausage formation - this is how boerewors was created.

Our Story

Lionel Miller (Head Chef) grew up in sunny Johannesburg South Africa - Sunday BBQ/Braai was his domain. From building the fire, to flavouring the meat and ultimately cooking it, Lionel developed a knack for tastes and flavours with extensive experimenting for fresh tasty tangy style BBQ cooking. Lionel began working in a steakhouse at the age of 14 and remained in the steak/grilled meat style business until coming to Australia in the mid 80’s. He founded Squires Loft ‘the steak specialists’ in Australia. He created all the tastes and flavours for the business as well as writing the specification and details for all the meat products. The business has grown to a national chain of 18 + stores. No longer involved in the Squires Loft business, Lionel begun his next BBQ/grill adventure with his youngest son, Luke.

Luke and Lionel are very excited to be able to take their food to the streets of Melbourne in a more modern and versatile way, in their mobile kitchen. Their core belief of Quality, Consistency and Value will be delivered in every meal.
